Cheese Curds
Young cheddar fresh from the vat in its natural, random form before pressing into blocks and aging. Very mild flavor, chewy texture (curds squeak in your teeth hence also the name “squeaky cheese”).

USES: great for snacks, or try them batter-dipped and deep fried.

Orders with Old Fashion Cheese Curds are special. We only make our delicious curds once or twice a week. Orders with curds are usually shipped only on Tuesdays. If your order contains curds your entire order will be held until the curds are ready.

Mild Cheddar
From curds pressed and aged at least 2 weeks. Slices are firm, flavor is subtle.

USES: shred on burritos, enchiladas, pizza, or salads. Serve with milk, apples and crackers. Perfect complement to champagne or Chardonnay.

Medium Cheddar
Aged more than 30 days. Slices smoothly with nutty, creamy flavor.

USES: great for cheeseburgers, toasted sandwiches, snacking, or shredded for casseroles. Delightful with any wine, from Chardonnay to Sauvignon Blanc.

Sharp Cheddar
Aged at least six months. Smooth texture, flavor is tangy and robust.
